Capèu Saint Mont

The word CAPÈU which means 'beret' in Gascon, is closely associated  with the Saint Mont vineyard. Deeply rooted in Gascon culture and worn with  pride over generations, it embodies the human values and passion that are dear to our winegrowers, and that have played an essential role in the creation and reputation of the wines of Saint Mont.

Native grape varieties: 70% Tannat, 20% Pinenc, 10% Cabernet Sauvignon

This cuvée is blended from wines made with grapes grown in the appellation ’s fawn sand terroirs (situated to the north and west of the appellation). This is a particularly early -ripening terroir which favours an optimal maturation of the Tannat, Pinenc and Cabernet Sauvignon grapes and a resulting silky elegance in the wines.

Vinification

Each grape variety is harvested at phenolic maturity and vinified separately. Following a 48 hour period of skin maceration, extraction takes place with gentle pump-overs. After malolatic fermentation, the wines are blended and the maturation period begins in French oak barrels 12 to 14 months (third fill barrels only in order to keep the fruit nicely balanced). Before bottling, the wine is matured for a further four month period in tanks to improve the overall harmony.

Tasting notes

This wine expresses the aromatic complexity so typical of the Saint Mont reds with black berry fruits and mild spices underscored by slight toasted notes. Its subtle balance with fresh, elegant tannins is typical of the best fawn sand terroirs; delicate fresh flavours with additional character from the Tannat grape.

Perfect match for red meats but its aromatic freshness and elegant tannic structure means that it also goes well with the most delicate of white meat dishes, tapas or with a magnificent platter of mild cheeses. Serve at 16°C.
