Grape variety: Melon de Bourgogne.

Yield: 45HL/HA.

Terroir: The area of this appellation is based on a spot of granodiorite, called Château-Thébaud granite, and on the derivated gneiss Granodiorite is a plutonic rock, resulting from the crystallization at depth of magma. It has a grainy texture close to granite but a darker appearance, it is made up of quartz, plagioclase, feldspar and micas. The cliff of Pont Caffino, along the Maine river below the village of Château-Thébaud show the best of this terroir.

The vines are 60 years old and are exposed on a slight slope along the Maine river.

Vinification

The vinification is innovative. During a classic vinification on lees, the wine remains in tank in contact with the lees during 6 to 14 months, then it is bottled. The Cru Château Thébaud remains on its lees for at least 24 months.

Tasting notes

Beautiful aromatic range : fresh exotic fruits, candied white fruits ; smoky notes (licorice, gunflint) and toasted notes.

This wine has a nice roundness due to its maturation but his beautiful bitters structure this wine.

This wine is no longer et not only the companion of seafood and shellfish, it expresses itself at its best served with fine gastronomic cuisine of sea or river fish, but also with white meats, poultry liver and sweetbreads, etc., and certain cheeses. Tasting it as an aperitif is also very pleasant.
