Vinification

The vinification is innovative. Indeed, during a classic vinification on the lees, the wine remains in the tank in contact with the lees for 6 to 14 months, then it is bottled. The Cru La Haie Fouassière must remain on its lees for a minimum of 18 months, followed by 6 months of rest in bottle. 

Tasting notes

Nice aromatic complexity on the nose: notes of candied citrus fruits, aromatic plants and mineral notes of gunflint and licorice. The palate is ample, but balanced by a perceptible tension. Bitters are well present and give a nice structure. The finish is saline and very long, signature of this terroir.

This wine is no longer et not only the companion of seafood and shellfish, it expresses itself at its best served with fine gastronomic cuisine of sea or river fish, but also with white meats, poultry liver and sweetbreads, etc., and certain cheeses. Tasting it as an aperitif is also very pleasant.
