"La Madone" Fleurie 2022
This cuvée comes from the terroir of the plot called La Madone, located just below the Madone chapel, which overlooks the village of Fleurie. The grapes are harvested manually, with a first sorting in the vineyard, followed by another sorting in the cellar.
We chose semi-carbonic maceration, typical of Beaujolais. The harvest was placed directly into our concrete vats as whole bunches (the berries are intact) for intracellular fermentation. We inoculated with a pied de cuve (a starter culture) to initiate fermentation with indigenous yeasts, without the use of SO2. A light sulfiting occurs after malolactic fermentation. The wine was aged 50% in concrete vats and 50% in 228-litre barrels for 8 months in our cellar, located in Labourons, Fleurie.
The bottling, as well as the rackings, were done during the descending moon phase, on fruit or flower days, to preserve the aromas.
